Morning Glory Muffins

My family loves these!

1 1/2 cups flour
1/2 cup bran
2 tsp baking powder
1/2 tsp salt
2 cups shredded carrots
1/2 cup peeled, diced apple
1/2 cup raisins
1/2 cup chopped nuts
1/2 cup flaked coconut
1 tsp cinnamon
3/4 cup sugar
1/4 cup brown sugar
1/2 cup butter, softened
3 eggs
2 tsp vanilla

In a large bowl, mix flour, bran, baking powder and salt together. Add carrots, apple, raisins, nuts, coconut, and cinnamon and mix well. Set aside.

Beat together the sugars, butter, eggs and vanilla. Add this to the rest of the ingredients and mix together.

Spoon into greased muffin tins (or baking cups). Bake at 350 for 25-30 minutes. Makes 12 muffins.

  1. i just made these! they are delicious. i used a cup of wheat flour, 1/2 cup of bleached. i used 1/2 cup AllBran cereal because I didn't have any bran. i used a bag of pre-julienned carrots b/c i wasn't about to shred my own. my nuts were pecans (yum). and i didn't use the full amount of white sugar... i started pouring it in and then freaked out and stopped... and they are plenty sweet! next time i might just try 1/4 c brown and 1/4 white. and i got 15 muffins out of it (I think b/c my bran and carrots were bulkier than the original recipe)!
